Frozen Tuna Roe and Bottarga Delicacy Product
If you wondering what the tuna roe is, then you should know that it is the fish egg which comes from female tuna which turned into seafood product. But you might want to know how the product can still maintain its good taste and quality even after a few times. That is why you should know the method which used to create the frozen tuna roe product.
Since the product is made using tuna, then first the tuna fish will be caught in the sea then freeze to preserve its freshness while brought into the tuna factory which will process them further. In the factory, the worker will start to clean the tuna fish, thus it will be gill, gut, and stripped from its head, tails, and any other unwanted parts. In this process, the tuna roe is taken from the tuna fish to be separated and turned into frozen tuna roe product. Meanwhile the tuna meat itself will be cut to process it further to be other kinds of tuna product.

For the making process of tuna roe product, the tuna roe will be separated together with its pouch. This tuna roe pouch is the one that will be used to make different kinds of tuna roe product you can see on the market. First of course, the easiest kind which is the frozen tuna roe product which is pretty easy to make. The process needed to create this product is only to clean and pack the tuna roe individually, before being frozen to preserve its freshness. The second kind is the hardest tuna roe product to make which is the bottarga. This product is actually preserved tuna roe product which very common in Italy and Spain region as a day to make their favorite delicacy.
Making bottarga itself is hard because it will take weeks to complete it. Furthermore only ripe tuna roe that can be made into bottarga thus the ingredient is really special. To know which tuna roe that is already ripe, the egg should be visible inside the pouch and it should also have uniform color. When the egg inside the pouch is too watery, it can still be used but it will take even longer time to complete the making process. However, for pouch that have eggs which are too small in size thus you cannot see the egg directly, then it is better to use it for other product since it cannot be made into bottarga frozen tuna roe.
After the right tuna roe pouch is obtained, then it will be massage to remove airbags from inside the pouch. Next is to soak the tuna roe pouch overnight with saltwater before doing the drying process. The drying process is done using panels to press the tuna roe pouch while being dried under the sun. This drying process is done using natural way thus it takes quite some times for the tuna roe pouch to dry. When it is dry, then it will be cured to preserve the taste and quality of the frozen tuna roe. It will still be dried under the sun to complete the preserving and curing process.
As you see, the making process of bottarga is done using natural sunlight which is why; it takes weeks to complete the whole process. Some bottarga will also be covered with special kinds of beeswax to make this frozen tuna roe even more special by turn it into bottarga sausage.
